Ingredients

  1. Spaghetti – 1 packet
  2. Chopped Carrot – 1
  3. Grated Garlic – 2 cloves
  4. Grated Tomatoes – 3 (Medium size)
  5. Chopped Capsicum – 1/2 cup
  6. Chopped Mushrooms (optional) – 1/2 cup
  7. Chopped Broccoli (optional) – 1/2 cup
  8. Salt – As per your taste
  9. Black Pepper – 1 tbsp.
  10. Oregeno – 2 tbsp.
  11. Chopped Coriander / Parsley – 1 tbsp.

Cooking Instructions

  1. Cook the spaghetti pasta according to package instructions and drain.
  2. In a large pan, heat any refined oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the chopped vegetables to the pan and sauté until tender, about 5 minutes.
  4. Pour in the grated tomatoes and add the parsley/fresh green coriander and oregano. Season with salt and pepper to taste.
  5. In a large serving bowl, mix the cooked spaghetti noodles with the tomato sauce.
