Perfectly Spiced Aloo Gobi

  7. ½ tsp turmeric powder
  8. 1 tsp red chili powder (adjust to taste)
  9. 1 tsp coriander powder
  10. ½ tsp garam masala
  11. Salt to taste
  12. 1 medium cauliflower, cut into florets
  13. 2 large potatoes, peeled and diced into 1-inch cubes
  14. ½ cup water (or as needed)
  15. Fresh cilantro, chopped (for garnish)

Cooking Instructions

  1. Heat vegetable oil in a large pan or kadai over medium heat. Add cumin seeds and let them splutter for about 30 seconds.
  2. Add finely chopped onions to the pan and sauté until they turn golden brown, which usually takes 5-7 minutes.
  3. Stir in the grated ginger and minced garlic. Cook for another 1-2 minutes until their raw aroma dissipates and they become fragrant.
  4. Add the pureed or chopped tomatoes. Cook, stirring occasionally, until the oil begins to separate from the masala mixture. This step usually takes about 8-10 minutes.
  5. Now, add the dry spices: turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 1 minute. If the masala starts to stick to the bottom, add a splash of water.
  6. Introduce the cauliflower florets and diced potatoes to the pan. Toss gently to ensure they are evenly coated with the rich spice mixture.
  7. Add ½ cup of water to the pan. Cover it with a lid and reduce the heat to medium-low. Cook for 15-20 minutes, or until both the potatoes and cauliflower are tender. Stir occasionally to prevent sticking and ensure even cooking.
