Ingredients
- Pav buns – 4
- Medium-sized potatoes – 4
- Finely chopped onions – 2
- Dabeli masala – 2 tbsp
- Pomegranate seeds – 2 tbsp (optional)
- Roasted peanuts – 2 tbsp
- Nylon sev – 1/4 cup
- Green chutney – 4 tbsp
- Tamarind chutney – 3 tbsp
- Boiled peas – 1/2 cup (optional)
- Oil – 2 tbsp
- Salt – as per health
Cooking Instructions
- Boil 4 medium-sized potatoes and mash them thoroughly.
- Heat a pan and add 2 tbsp oil. Add the mashed potatoes to the pan.
- Mix dabeli masala, salt, and tamarind chutney into the mashed potatoes. Stir well until evenly combined.
- Slice the pav buns in half and lightly toast them on a hot griddle (tava).
- On one side of the toasted pav, spread green chutney, and on the other side, spread tamarind chutney or red sauce.
- Place a portion of the prepared potato mixture onto the chutney-covered side of the pav.
- Add roasted peanuts and sprinkle nylon sev over the potato filling.
- Close the pav with its top half and gently press it.
- Toast the stuffed pav on low heat from both sides until slightly crispy.
- Garnish the dabeli with pomegranate seeds and finely chopped green coriander for extra flavor.
- Optional Method- Add boiled peas to the mashed potatoes for a unique flavor and texture.
- Shape the mashed potato-pea mixture into small patties and pan-fry them.
- Use these patties as the filling instead of the potato mixture for a crispier dabeli.
