  5. Pinch of Asafoetida (Hing)
  6. 1/4 tsp Turmeric Powder
  7. 1 tsp Red Chili Powder
  8. 1 tsp Coriander Powder
  9. 1/2 tsp Cumin Powder
  10. 1 small Green Chili, slit
  11. 1 inch Ginger, grated
  12. 1 small Tomato, chopped
  13. 1 tbsp Jaggery (Gud) or Brown Sugar
  14. 2 tbsp Tamarind Pulp (or 1 tsp tamarind paste mixed with water)
  15. Salt to taste
  16. 4-5 cups Water
  17. Fresh Coriander Leaves for garnish

For the Dhokli:

  1. 1 cup Whole Wheat Flour (Atta)
  2. 1 tbsp Gram Flour (Besan)
  3. 1/2 tsp Red Chili Powder
  4. 1/4 tsp Turmeric Powder
  5. 1/4 tsp Carom Seeds (Ajwain)
  6. 1 tbsp Oil
  7. Salt to taste
  8. Water, as needed to knead

Cooking Instructions

  1. Prepare the Dal: Pressure cook the soaked toor dal with 3 cups of water and a pinch of turmeric until soft (3-4 whistles). Mash lightly.
  2. Make Dhokli Dough: In a bowl, combine wheat flour, besan, chili powder, turmeric, carom seeds, oil, and salt. Add water gradually and knead into a firm, smooth dough. Let it rest for 10 minutes.
  3. Roll and Cut Dhokli: Divide the dough into small portions. Roll each portion into a thin circle (like a chapati). Cut into diamond or square shapes.
  4. Temper the Dal: In a large pot, heat ghee or oil. Add mustard seeds, cumin seeds, and hing. Once they splutter, add green chili, grated ginger, and chopped tomato. Sauté until tomatoes soften.
  5. Add Spices and Dal: Add turmeric, red chili, coriander, and cumin powders. Sauté for a minute. Pour in the mashed dal, remaining water (adjust consistency), jaggery, tamarind pulp, and salt. Bring to a boil.
  6. Simmer Dhokli: Gently slide the dhokli pieces into the boiling dal, one by one, stirring gently to prevent sticking. Cook for 10-12 minutes on medium heat, until dhokli are cooked through and the dal thickens slightly.
