Hearty Masoor Dal Tadka

  6. 1 tsp cumin seeds
  7. 1 large onion, finely chopped
  8. 1 inch ginger, grated or finely minced
  9. 2-3 cloves garlic, minced
  10. 1-2 green chilies, slit lengthwise (optional)
  11. 1 large tomato, finely chopped
  12. 1/2 tsp red chilli powder (or to taste)
  13. 1/2 tsp coriander powder
  14. 1/4 tsp garam masala
  15. Fresh coriander leaves, chopped (for garnish)

Cooking Instructions

  1. Wash the Dal: Rinse the masoor dal thoroughly under cold water until the water runs clear. This removes impurities and excess starch.
  2. Cook the Dal: In a pressure cooker, combine the washed dal, 3 cups of water, turmeric powder, and salt. Close the lid and cook for 3-4 whistles on medium heat. If using a regular pot, cook until the dal is soft and mushy (approx. 20-25 mins), stirring occasionally and adding more water if needed.
  3. Prepare the Tadka Base: Heat ghee or oil in a separate pan or small wok (kadai) over medium heat. Add cumin seeds and let them splutter for a few seconds until fragrant.
  4. Sauté Aromatics: Add finely chopped onions to the pan and sauté until they turn light golden brown and translucent, about 5-7 minutes.
  5. Add Ginger & Garlic: Stir in the minced ginger and garlic. Sauté for another minute until their raw smell disappears, being careful not to burn them.
  6. Add Green Chillies & Tomatoes: Incorporate the green chillies (if using) and chopped tomatoes. Cook until the tomatoes soften completely and release their juices, mashing them slightly with the back of a spoon. This should take about 3-5 minutes.
  7. Spice it Up: Lower the heat. Add red chilli powder, coriander powder, and garam masala. Sauté for just 30 seconds until the spices are fragrant, adding a splash of water if they start to stick to prevent burning.
  8. Combine Dal and Tadka: Once the pressure cooker has naturally released its pressure, open it and lightly mash the cooked dal with a whisk or ladle for a creamy, consistent texture. Pour the entire prepared tadka mixture into the cooked dal.
  9. Simmer and Serve: Mix everything well and let it simmer for 5-7 minutes on low heat, allowing all the flavors to meld beautifully. Adjust the consistency by adding hot water if you prefer a thinner dal. Taste and adjust salt if necessary.
  10. Garnish: Garnish generously with fresh chopped coriander leaves just before serving. Serve hot with steamed rice or your favorite Indian bread.
